Lemon Chess Pie
2 c. sugar
1/4 c. milk
1 T. flour
1/4 c. melted butter
1 T. corn meal
4 eggs
4 T. lemon zest unbaked pie shell
1/4 c. lemon juice
Combine sugar, flour, corn meal and lemon zest in a mixing
bowl. Add lemon juice, milk and butter. Whisking thoroughly. Whisk eggs in
one at a time and pour into pie shell. Bake in a 375 oven for 30 minutes
until golden brown and filling is set.
Yield: 8 servings.
