Chipotle Maple Glaze

 

2 Cups Maple Syrup (Pure Maple 100% Grade B)
½ c. Red Wine Vinegar
1 ½ c. Plain BBQ Sauce
1 Can Chipotle Puree
(Small can w/adobe sauce-puree w/water)

3 Tbsp. Minced Garlic
1 ¼ c. Raisins
1 ¼ c. Ketchup
½ c. Honey
6 Tbsp. Minced Shallots


Combine all ingredients in medium size sauce pan.  Bring to a boil.  Simmer for 45 minutes.  Cool for 20 minutes.  Salt and pepper to taste.  If sauce is to spicy add more honey. 

Chef’s Note: Perfect for holiday roasting.  Use as basting liquid while roasting whole homes and poultry dishes.  Can also be used as a finishing glaze.
