Chili Colorado

(Use ground meat of choice or combination of game and pork, use turkey as healthy option)
 

                         2 ½ lbs. ground meat (lean)                                           1 ½ cups cooked pinto beans
                         1 ½ cups cooked black beans                                       1 ½ cups cooked red kidney beans
                         2 red bell peppers – diced                                             2 yellow bell peppers – diced 
                         2 jalapeños – diced                                                        1 large onion – diced
                         2 cups corn                                                                    2 cans diced tomatoes
                         5 Tbsp. garlic                                                                 1 bottle Shiner Bock beer
                         6 corn tortillas – diced                                                    5 dashes hot sauce
                         4 ½ cups beef stock                                                       salt & pepper to taste

                        Dry Seasoning
                        1 ¼ cup chili powder
                        ½ cup paprika
                        4 Tbsp. cumin
                        3 Tbsp. oregano

In a large pot, brown meat with dry seasonings, onion and garlic.  Add corn, tomatoes, peppers, beer and stock.  Bring to a boil, reduce heat and simmer for 1 hour.  Add corn tortillas and beans.  Remove from heat and cover.  After 10 minutes stir and add hot sauce, salt and pepper.
