Tomato and Basil Soup |

| 8 | tomatoes, chopped or 4 cups canned |
| 2 c. | tomato juice |
| 2 c. | chicken stock |
| 1 bunch | fresh basil leaves, small |
| 1/2 c. | soft butter |
| 1 c | heavy cream |
| 1/4 tsp. | pepper |
|
Puree the tomatoes, tomato juice and basil. Pour tomato mixture and chicken stock into a large pot and bring to a boil. Reduce heat and simmer for 30 minutes. Stir in butter, cream and pepper. Salt can be added if needed. Heat 10 more minutes. Yield: approximately 16 servings. |
